BLUE HEAVEN CORNBREAD
Ingredients
2 cups flour
2 cups blue cornmeal
2 tablespoons plus 2 teaspoons baking powder
6 tablespoons sugar
1 1/2 teaspoons salt
2 cups milk
4 eggs, beaten
1/2 cup vegetable oil
Preparation
Heat oven to 425 degrees. Lightly grease two 8-inch square baking pans. In large bowl, blend dry ingredients. In medium bowl, beat together milk, eggs and oil. Make a well in dry ingredients; add liquid ingredients and stir together. Divide batter equally between the two prepared baking pans. Bake 20-25 minutes, until tops are nicely browned. Remove from oven and cool for at least 10 minutes before cutting into squares to serve. Makes 12-16 servings.
