CHEESE VEGETABLE CHOWDER (Lactose Reduced)
Ingredients
2 cups chopped cabbage
1 cup EACH onion slices, celery slices, frozen peas and thin carrot slices
1/2 cup (1 stick) butter
1 (16-ounce) can cream-style corn
2 1/2 cups milk (lactose reduced)
1 teaspoon salt
3/4 teaspoon thyme
1/8 teaspoon pepper
2 1/2 cups (10 ounces) shredded Cheddar cheese
Preparation
Saute cabbage, onion, celery, peas and carrots in butter in 3-quart saucepan 8 to 10 minutes or until vegetables are tender, stirring frequently. Add corn, milk and seasonings; simmer over low heat 15 minutes, stirring occasionally. Add cheese; stir until melted.
