IMPOSSIBLE COCONUT PIE
Ingredients
2 cups milk
1/2 cup butter, softened
4 eggs
3/4 cup sugar
1/2 cup buttermilk baking mix
1 1/2 teaspoons vanilla
1 cup flaked coconut
Preparation
Combine all ingredients and stir with a fork until blended. Pour into a greased 10-inch deep-dish pie plate. Bake at 350 degrees for 50-55 minutes, or until golden brown and a knife inserted in center comes out clean. Refrigerate leftovers. –Syble Ray Shoults
