PIZZA MELBA ROUNDS

Ingredients

1/2 pound ground beef
1/2 pound hot pork sausage
1/4 cup tomato sauce
2 teaspoons Italian seasoning
1 to 3 drops hot sauce
1/2 pound soft processed American cheese, cut in small chunks
40-50 melba toast rounds
Finely shredded mozzarella cheese

Preparation

Combine beef and sausage in a large skillet. Cook until browned, stirring to crumble; drain well. Stir in tomato sauce, Italian seasoning and hot sauce. Place over low heat. Add processed cheese a few pieces at a time, stirring constantly until cheese melts. Spoon small mounds of mixture onto melba rounds. Sprinkle mozzarella over tops of the hot meat mixture, and serve. Makes about 40-50 rounds. (NOTE: To freeze, mound mixture onto melba rounds. Place on a baking sheet, freeze, and store in tightly sealed plastic bags. When ready to serve, place frozen rounds on baking sheets. Bake at 400 degrees about 10 minutes, until bubbly. Sprinkle cheese over tops of hot rounds.)
