OATMEAL COOKIES
Ingredients
2 sticks margarine, softened
3/4 cup light brown sugar
3/4 cup sugar substitute
3 eggs
1 teaspoon vanilla
1 1/2 cups self-rising flour
1 teaspoon cinnamon
1 cup raisins
1 cup coconut
1 cup finely chopped pecans
3 cups quick-cooking oats
Preparation
Cream together the margarine and sugars. Add eggs and vanilla, mixing well. Combine flour and cinnamon; add to creamed mixture, beating well. Blend in raisins, coconut and pecans. Stir in oats. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake at 350 degrees for 12 minutes; turn oven to broil and cook 2 minutes longer. Remove cookies from cookie sheets and place on paper towel to cool. Makes about 4 dozen.
