CAJUN LIMA BEAN STEW
1 (14-ounce) can diced tomatoes, undrained
1 cup chopped bell pepper
1 cup chopped onion
1 cup chopped celery
1 (16-ounce) package bulk pork sausage, browned and drained
2 cups dry lima beans, cooked
Combine tomatoes, bell pepper, onion and celery in a large saucepan. Bring to a boil, reduce heat and simmer 15 minutes, or until vegetables are tender. Stir in cooked sausage and lima beans. Return to a boil; reduce heat, cover and simmer 15 minutes. Makes 10-12 servings.
