DIJON SMOKED CHICKEN FETTUCINI

Ingredients

4 tablespoons butter
1 tablespoon finely chopped garlic
1 tablespoon finely chopped shallots or onion
1/2 pound fresh mushrooms, thinly sliced
1 1/2 cups heavy cream
3 tablespoons Dijon mustard
1/2 teaspoon salt
Fresh ground pepper to taste
4 green onions and tops, finely chopped
2 1/2 cups smoked chicken or smoked turkey, diced
1 cup seeded, chopped fresh plum tomatoes
1/2 cup grated Parmesan cheese
1 (1-pound) package fettucini, uncooked

Preparation

In a saucepan, combine first nine ingredients. Heat over low heat, stirring occasionally, until margarine melts and mixture is well blended. Place on side burner of gas grill and keep warm during cooking process. Place chickens on metal or glass cone-shaped roasters; cover wing tips with foil to prevent burning. Place chickens on grill over medium heat. Roast chicken. In a large skillet over medium heat, melt butter; lightly saute garlic, shallots and mushrooms. Reduce heat to low; add cream, mustard, salt and pepper, blending well. Keep warm over low heat, stirring often. Cook fettucini in salted water according to package directions. When fettucini is almost done, add green onions, chicken, tomatoes and Parmesan to cream sauce, stirring to blend well. Allow to heat through, stirring often. Drain fettucini; place on warm serving platter. Pour cream sauce over fettucini and serve. Makes 6 servings.
