PORK CHOPS WITH APPLE/ORANGE SAUCE

Ingredients

1 tablespoon butter
1 tablespoon vegetable oil
4 red delicious apples, peeled, cored and cut into 1/3-inch-thick wedges
1/4 cup Grand Marnier or other orange liqueur
1 1/4 cups canned low-salt chicken broth
5 tablespoons chopped fresh parsley, divided
3 tablespoons honey
1 teaspoon grated orange peel
Salt and pepper to taste
4 (1 1/4-inch-thick) rib pork chops

Preparation

In a large, heavy skillet, melt butter with oil over medium-high heat. Add apples and saute until tender and golden, about 10 minutes. Add liqueur and bring to a boil. Add 2 tablespoons of the parsley, along with the honey and orange peel. Reduce heat and simmer, stirring occasionally, until liquid is slightly thickened, about 5 minutes. Remove from heat. Season with salt and pepper; set aside. Grill pork chops over medium-high heat for about 7 minutes per side, or until chops register 160 degrees on a meat thermometer. Transfer pork chops to serving plates. Return sauce to low heat and bring to a simmer. To serve, spoon warm sauce, with apples, over chops, and sprinkle with remaining parsley. (NOTE: Sauce can be made up to a day ahead of time. Cover and refrigerate; reheat to serve.) Makes 4 servings.
