APPLE DUMPLINGS

Ingredients

6-8 small Granny Smith apples
1/2 cup sugar
1/2 teaspoon cinnamon
3-4 tablespoons butter
1 package refrigerated ready-crust pie crusts
2 cups sugar
2 cups water
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup butter

Preparation

Peel and core apples. In a small bowl, combine 1/2 cup sugar and 1/2 teaspoon cinnamon; set aside. Unfold each pie crust and cut each into four pieces. Place one apple in center of each piece of dough. Place a slice of butter in the hollow of each cored apple and sprinkle with cinnamon/sugar mixture. Fold corners of dough to top of apples, and pinch to seal. Place dumplings 1 inch apart in a 9- x 13-inch baking dish. In a saucepan, combine 2 cups sugar, 2 cups water, 1/4 teaspoon cinnamon and nutmeg. Bring to a boil over medium-high heat, stirring occasionally, and cook for 5 minutes. Remove from heat and stir in 1/4 cup butter until melted. Pour sauce evenly over dumplings. Bake at 375 degrees for 30 minutes until lightly browned. Good served with whipped topping or ice cream.
