ORANGE PINEAPPLE SALAD

Ingredients

2 small boxes orange gelatin
2 cups hot water
1 (8-ounce) can frozen orange juice
2 (11-ounce) cans mandarin oranges, drained
1 (20-ounce) can crushed pineapple, undrained
1 (4-serving) package lemon instant pudding mix
1 cup milk
1/2 cup non-dairy whipped topping

Preparation

In a mixing bowl, dissolve gelatin in hot water. Stir in frozen orange juice; cool. Add mandarin oranges and pineapple, blending well. Pour into a 9- x 13-inch dish. Refrigerate until set. In a bowl, combine pudding mix and milk, blending well. Fold in whipped topping. Spread over congealed mixture. Refrigerate overnight.
