SQUASH CASSEROLE

Ingredients

2 cups cooked yellow squash (about 4 medium)
1 stick margarine
2 eggs
1 cup chopped onion
1 cup evaporated milk
1 cup grated Cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
2 cups saltine cracker crumbs

Preparation

Drain cooked squash. Add margarine, stirring to melt. Add all remaining ingredients, blending well. Bake, uncovered, in a greased 2-quart casserole at 375 degrees for 40 minutes. (Note: Casserole can be frozen, unbaked, in aluminum loaf pans. Thaw before baking.) Makes 6-8 servings.
