CARROT CAKE
Ingredients
2 cups plain flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups vegetable oil
4 eggs
3 cups finely grated carrots
Icing (recipe follows)
Preparation
In a large bowl, combine flour, sugar, soda, cinnamon and salt. Stir together with a spoon. Add oil, stirring until blended. Add eggs, stirring after each addition. (Do not use electric mixer.) Stir in carrots. Pour batter into two greased 9-inch cake pans. Bake at 350 degrees for 30 minutes. Remove from pans and cool completely. Spread Icing between layers and on top and sides of cake.
