1 (16-ounce) package frozen mixed vegetables
1 cup chopped celery
1 onion, chopped
1 cup grated Cheddar cheese
1 cup mayonnaise
1 tube of round buttery-flavored crackers, crushed
1 stick butter or margarine, melted
Cook frozen mixed vegetables according to package directions; drain. Place vegetables in a lightly greased 2-quart baking dish. Combine celery, onion, cheese and mayonnaise. Mix well and spread over vegetables. Toss crushed crackers together with butter; sprinkle over mayonnaise mixture. Bake uncovered at 350 degrees for 30 minutes. Makes 6-8 servings.
