MUSTARD TENDERLOIN MEDALLIONS
Ingredients
1 (1 1/2- to 2-pound) package pork tenderloin
Dijon mustard
Preparation
Place tenderloin on a large sheet of aluminum foil. Spread mustard over meat to cover. Wrap foil tightly around meat. Place in a shallow baking dish. Bake at 350 degrees for about 1 hour, or until meat thermometer inserted in tenderloin registers 160 degrees. Slice into medallions to serve. Makes 6-8 servings.
