OATMEAL SNACK CAKE

Ingredients

1 1/2 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoons soda
1 teaspoon cinnamon
1 1/2 cups water
1 cup oats, regular or quick-cooking
1/2 cup butter or margarine
1 cup firmly packed brown sugar
1 cup granulated sugar
2 eggs, beaten
Peanut Butter Icing (recipe follows)

Preparation

Sift together the flour, salt, soda and cinnamon; set aside. In a large saucepan, bring water to a boil; add oats, butter and sugars. Stir until butter melts and ingredients are thoroughly blended. Allow mixture to cool; add beaten eggs and stir. Gradually add flour mixture to oat mixture, stirring well after each addition. Pour batter into a greased and floured 13- x 9-inch pan. Bake at 350 degrees for 30 minutes. Remove cake from oven and spread with Peanut Butter Icing. Return to oven and bake 10 more minutes at 350 degrees. Cool in pan.
