BEEF-BACON-BROCCOLI SALAD

Ingredients

3 cups cooked roast beef, finely chopped
1 1/2 cups chopped fresh broccoli
1/2 cup raisins
1/2 cup chopped green onion
1 cup chopped toasted pecans
1 cup mayonnaise
1/2 cup sugar
2 tablespoons cider vinegar
1 large red apple, unpeeled and chopped
2 slices bacon, fried and crumbled
Shredded lettuce

Preparation

Combine roast beef, broccoli, raisins, onion and pecans; refrigerate. In a small bowl, combine mayonanaise, sugar and vinegar; blend well and refrigerate. Just before serving, add apple to salad mixture. Pour dressing over sald and blend well. Sprinkle crumbled bacon over top. Place lettuce on a serving platter and mound salad over lettuce.
