Ingredients

4 slices bacon, chopped
1 (2 1/2- to 3-pound) chicken, cut into serving pieces
1 (10-ounce) package fresh mushrooms, quartered
1 clove garlic, finely chopped
1 envelope dry onion soup mix
1 1/4 cups water
1/2 cup red wine or water
1/2 teaspoon dried oregano or crushed thyme leaves

Preparation

In a Dutch oven or 6-quart saucepan, cook bacon until crisp. Remove bacon and set aside, reserving drippings in skillet. Add chicken to drippings and brown on all sides. Remove chicken and set aside. In same drippings, add mushrooms and garlic and cook over medium heat, stirring, for 4 minutes. Return chicken and bacon to Dutch oven. Blend onion soup mix and water; add soup mixture, wine and oregano to chicken. Bring to a boil over high heat. Reduce heat to low and simmer, covered, 40 minutes, or until chicken is done. Makes 4-6 servings.
