SWEET POTATO SALAD

SWEET POTATO SALAD

Ingredients

5-6 sweet potatoes
1 small onion, thinly sliced
1 yellow bell pepper, chopped
2 tablespoons chopped dill pickle
2 tablespoons red wine vinegar
1 teaspoon crushed celery seed
1 teaspoon crushed peppercorns
2-3 tablespoons prepared mustard
3-4 tablespoons sour cream
2 tablespoons mayonnaise
Salt to taste
Whole celery seeds

Preparation

Peel and cube sweet potatoes. Boil in lightly salted water to cover 7-10 minutes, until fork-tender. Drain and place in large bowl. Add onion, bell pepper, pickle, vinegar, crushed celery seed and crushed peppercorns. Toss together. In a small bowl, combine mustard, sour cream, mayonnaise and salt, blending well. Add to potato mixture and toss together. Sprinkle whole celery seed on top. Cover and chill 12 hours before serving. Makes 10-12 servings. –Jean Goodson, Bibb County
