CHOCOLATE PIE

Ingredients

1 cup sugar
3 heaping tablespoons cocoa
3 heaping tablespoons flour
2 egg yolks, beaten
1 cup evaporated milk
1 cup water
1 teaspoon vanilla
2 pats butter
1 (9-inch deep-dish) pie crust, bake
2 egg whites
4 tablespoons sugar

Preparation

In top of a double boiler, combine 1 cup sugar with cocoa and flour, blending well. Add egg yolks, mixing in well. Slowly stir evaporated milk and water into cocoa mixture, mixing until smooth. Cook over hot, not boiling water, stirring, until mixture thickens, about 5 minutes. Remove from heat; stir in vanilla and butter and blend well. Pour filling into pie crust. In a bowl, beat egg whites at high speed of electric mixer until soft peaks form. Gradually add sugar, beating until stiff. Spread meringue over pie. Bake at 350 degrees until meringue is lightly browned.
