Ingredients

1 pound boneless pork loin
1 tablespoon taco seasoning mix
2 tablespoons minced parsley
Dash black pepper
1 tablespoon cooking oil
1 cup prepared chunky-style salsa
1/3 cup peach preserves

Preparation

Cut pork into 1-inch cubes. In a bowl, combine taco seasoning mix, parsley and pepper. Coat cubes with mixture. Heat oil in a heavy skillet over medium heat. Add pork. Cook and stir until browned, about 3-5 minutes. Stir in salsa and preserves. Reduce heat and simmer until pork is tender, about 15 minutes. Serve over hot cooked rice. (Note: For a different flavor, fully-cooked ham, cut into 1-inch cubes, can be substituted for pork loin.) Makes 4 servings.
