SARA’S COWBOY CHOWDER
1 pound ground beef
2 (16-ounce) cans mixed vegetables, drained
2 (11 1/8-ounce) cans Spanish rice
2 (16-ounce) cans creamstyle corn
2 (14-ounce) cans stewed tomatoes, undrained
2 (11-ounce) cans diced tomatoes and green chilies, undrained
Brown ground beef in a skillet; drain. In a large soup pot, combine beef and remaining ingredients. Simmer over low heat, partially covered, for about 2 hours. Makes 8-10 servings.
