REFRIGERATOR SLAW
Ingredients
1 large head cabbage, finely chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 onions, finely chopped
1 cup plus 2 tablespoons sugar, divided
1 cup vinegar
1 teaspoon salt
3/4 cup oil
1 teaspoon dry mustard
1 teaspoon celery seed
Preparation
In a large glass bowl, layer cabbage, peppers and onion. Sprinkle 1 cup of the sugar over all. Mix remaining 2 tablespoons sugar with remaining ingredients in a saucepan. Bring to a boil. Pour over cabbage mixture. Cover and refrigerate, tossing occasionally. Will keep in refrigerator for up to 2 weeks. Makes 10-12 servings.
