ALABAMA PEANUT BUTTER WHITE CHOCOLATE COCONUT CAKE

Ingredients

2 sticks margarine 1 3/4 cups sugar 4 eggs 2 1/2 cups self-rising flour 1 cup buttermilk 1/2 pound (4 squares) white chocolate, melted Filling, recipe follows Icing, recipe follows

Preparation

Cream margarine and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add flour alternately with buttermilk, beginning and ending with flour and mixing well after each addition. Add melted chocolate, and beat for 2 minutes. Pour batter into three greased and floured 9-inch cake pans. Bake at 325 degrees for 35 minutes, or until layers test done. Remove from pans and cool completely.
