GRILLED BREAST OF CHICKEN WITH PEANUT BUTTER SAUCE

Ingredients

3/4 cup creamy peanut butter 1/2 cup chicken stock 1/4 cup soy sauce 4 tablespoons peanut oil 1 tablespoon minced garlic 1 tablespoon fresh minced ginger 1 tablespoon sugar 1 tablespoon nacho chili paste or mole’, a Mexican condiment 2/3 cup heavy cream Peanut oil Salt 4 large boneless skinless chicken breasts

Preparation

Combine peanut butter and next seven ingredients in a blender. While blending, slowly add heavy cream and blend until smooth. Pass mixture through a fine strainer and set aside. Oil and salt chicken breasts on both sides. Grill over hot fire 5-7 minutes per side, or until juices are clear and internal temperature reaches 170 degrees. Slice each breast diagonally and fan pieces out on serving plate. Reheat sauce, thinning with additional stock if necessary. Spoon sauce around bottom of chicken slices. Serve immediately.
