PEANUT SURPRISE BARS

Ingredients

1 stick butter 1 (10-ounce) package marshmallows 1 1/2 cups peanut butter 3 cups plain toasted whole-grain oat cereal (e.g., Cheerios) 1 1/2 cups roasted peanuts

Preparation

In a large saucepan, melt butter over low heat. Add marshmallows and stir until melted. Stir in peanut butter. Remove from heat. Add cereal and peanuts, stirring to coat. Pour into a 9- by 13-inch pan. Cool before cutting into squares. —Patsy Riley, Wife of Third District Congressman Bob Riley
