Ingredients
3 eggs
2 cups sugar
1 cup canola oil
3 cups grated pears
1 tablespoon vanilla
3 cups plain flour
1 teaspoon soda
1 teaspoon salt
3 tablespoons cinnamon
3/4 cup golden raisins
3/4 cup chopped pecans or English walnuts
Preparation
Beat eggs well with electric mixer. Blend in sugar, followed by the oil, pears and vanilla; mix well. In a separate bowl, sift flour, soda, salt and cinnamon together. Gradually add to sugar mixture, beating well. Stir in raisins and nuts. Pour into two greased and floured 9- x 5-inch loaf pans. Bake at 325 degrees for 1 hour and 15 minutes. Bread freezes well. Makes 2 loaves.
