SQUASH CROQUETTES

Ingredients

6 small yellow squash
1 medium onion, chopped
1 egg
1 cup crushed saltine crackers
Salt and pepper to taste
Cornmeal
1 cup oil

Preparation

Slice squash and cook in small amount of boiling water until tender, 10-15 minutes. Drain well. Mix squash, onion, egg, crushed crackers and salt and pepper together well. Shape into patties; roll patties in cornmeal. In a large skillet, heat oil over medium-high heat. Add patties and cook, turning to brown on both sides, for 6-8 minutes, or until golden brown. Drain on paper towel. Makes 6-8 servings.
