Ingredients

4 tablespoons plain flour, divided
1 tablespoon dry mustard
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon sage
1 (2-pound) sirloin steak, sliced into 1/2- to 3/4-inch-thick strips
1/4 cup oil or shortening
1/4 cup water

Preparation

In a flat container, combine 2 tablespoons flour, mustard, salt, pepper and sage. Dredge steak strips in seasoned flour mixture. Heat oil in a large skillet over medium-high heat; add steak and brown quickly. Drain. Add water and return to medium heat. Cover tightly and simmer 30-40 minutes, or until meat is tender. Remove steak and keep warm. Drain drippings from pan and add enough water to make 1 cup liquid. Return liquid to skillet; blend in remaining 2 tablespoons flour until smooth. Heat over medium-high heat, stirring, until mixture begins to boil; reduce heat and simmer, stirring, until gravy is thickened. Serve gravy over steak. Makes 6 servings.
