ONE MORE MEAL FROM THAT BEEF ROAST

Ingredients

2 tablespoons butter or margarine, divided
1 large onion, coarsely chopped
3 stalks celery, coarsely chopped
1 green pepper, coarsely chopped
1 can cream of mushroom soup
1/2 cup water
1/2 teaspoon salt
Dash of pepper
2 cups leftover beef roast, cut into strips
1 (5-ounce) can chow mein noodles

Preparation

Melt 1 tablespoon butter in a skillet over medium-high heat. Stir-fry onion, celery and green pepper about 3 minutes, until vegetables are tender. Remove vegetables and place in a greased 2-quart casserole. Stir in soup, water and salt and pepper; set aside. Melt remaining margarine in same skillet and stir-fry beef over medium heat 1-2 minutes, or until heated thoroughly. Stir beef into vegetable mixture. Cover and bake at 350 degrees for 30 minutes. Sprinkle chow mein noodles over top and continue baking, uncovered, for 10 minutes. Makes 6 servings.
