QUICK BEEF CASSEROLE
1 pound ground beef
1 onion, chopped
3 medium potatoes, peeled
1 can cream of chicken or cream of mushroom soup
In a skillet, brown beef and onion together; drain and set aside. In a saucepan, cook potatoes in boiling water to cover until tender. Slice thinly. Spread ground beef to cover bottom of a greased 9-x 13-inch casserole; arrange potato slices over beef. Spread soup over potatoes. Cover and bake at 350 degrees for 30 minutes, or until soup is bubbly. Makes 4 servings.
