PUMPKIN PIE
Ingredients
1 quart milk, divided
1 (30-ounce) can pumpkin
5 eggs
1 1/2 cups sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
Pinch of ginger
Dash of salt
2 teaspoons vanilla
3 tablespoons cornstarch
3 (9-inch) regular pie shells, unbaked
Preparation
Pour milk into a large bowl, reserving 1/2 cup. Add pumpkin, eggs, sugar, spices, salt and vanilla, mixing well. In a small bowl, combine reserved milk with cornstarch, stirring until smooth. Beat into pumpkin mixture. Divide mixture evenly among pie shells. Bake at 375 degrees for 20 minutes, then turn oven to 350 degrees and bake 30 minutes longer.
