CARAMEL FROSTING

Ingredients

4 cups sugar, divided
1 (5-ounce can) evaporated milk plus enough whole milk to make 1 cup
2 sticks margarine

Preparation

In a large heavy boiler, combine 3 1/2 cups sugar and milk, blending well. Add margarine. Bring mixture to a boil, stirring. Reduce heat to medium and allow to cook, stirring occasionally, while caramelizing sugar. To caramelize sugar, sprinkle remaining 1/2 cup sugar in a nonstick skillet. Cook over high heat, constantly shaking pan, until sugar melts and syrup is a light golden brown. Stir into hot milk mixture and cook, stirring constantly, for 20 minutes, until mixture thickens. Remove from heat and let cool 10 minutes. Beat at medium speed of electric mixer for 15 minutes, or until of spreading consistency. (NOTE: If icing gets too thick while spreading, carefully add a few drops of milk.)
