JELLO CHEESECAKE

Ingredients

1 small box lemon gelatin
1 cup boiling water
1 (12-ounce) can evaporated milk, chilled
1 cup sugar
1 (8-ounce) package cream cheese, softened
Juice of 1 lemon
1 teaspoon vanilla
1 graham cracker crust

Preparation

Combine gelatin and boiling water, stirring until dissolved; set aside to cool. In a chilled bowl, whip chilled milk until soft peaks form. Gradually add sugar, beating until stiff peaks form. Add cream cheese, lemon juice and vanilla, blending well. Stir in cooled gelatin, mixing well. Pour into crust, refrigerate 2 hours before serving.
