PECAN PIE MINI MUFFINS

Ingredients

1 cup packed brown sugar
1/2 cup plain flour
1 cup chopped pecans
2/3 cup butter, melted
2 eggs, beaten

Preparation

In a bowl, combine brown sugar, flour and pecans; set aside. In a separate bowl, combine butter and eggs; stir into flour mixture. Fill greased and floured miniature muffin tins about 2/3 full. Bake at 350 degrees for 20-25 minutes, or until muffins test done. Remove muffins from tins immediately and cool on wire racks. Makes 2 1/2 dozen. Pat Schrand, Enterprise (Coffee County)
