JIFFY PLUM CAKE

Ingredients

1 cup oil
2 cups sugar
3 eggs
1 teaspoon ground cloves
1 teaspoon cinnamon
2 cups self-rising flour
2 (4-ounce) jars junior baby food strained plums
1 cup chopped pecans
1 cup powdered sugar
Juice of 1 lemon

Preparation

In a large mixing bowl, combine oil, sugar, eggs, cloves, cinnamon, flour and plums. Mix at medium speed of electric mixer until blended well. Fold in pecans. Pour batter into a greased and floured 10-inch tube pan. Bake at 300 degrees for 1 hour, or until cake tests done. Remove cake from pan and place on wire rack. Combine powdered sugar and lemon juice, blending well. Pour over warm cake. —Carolyn Gordon, Montgomery County
