MAMA LENA’S CHOCOLATE PIE
Ingredients
1 cup sugar
3 heaping tablespoons cocoa
3 heaping tablespoons plain flour
1 1/2 cups milk
3 egg yolks
1 teaspoon vanilla
1/2 stick margarine
1 (9-inch) pie crust, baked
3 egg whites
1/4 cup sugar
1 teaspoon vanilla
Preparation
In a heavy saucepan, combine sugar, cocoa and flour. Add just enough of the milk to make a paste. Add egg yolks; beat until thoroughly blended. Stir in remaining milk and 1 teaspoon vanilla. Cook over medium heat, stirring constantly, until mixture thickens. Remove from heat; add margarine, stirring until melted. Pour filling into pie shell. In a small bowl, beat egg whites with electric mixer at high speed until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form. Spread over pie filling. Bake at 350 degrees about 5 minutes, until meringue is lightly browned. —Pat Presley, Coffee County
