MEXICAN CASSEROLE

Ingredients

1 pound ground chuck
1 envelope taco seasoning mix
1 (1-pound) package light pasteurized process cheese, cut in chunks
1 (10-ounce) can diced tomatoes and green chilies
1 (5-ounce) package yellow rice, cooked according to package directions
1 (9-ounce) bag plain tortilla chips

Preparation

In a skillet, brown beef; drain. Stir in taco seasoning mix; set aside. In a microwave on low power, or in a heavy saucepan on stovetop, melt the cheese. Stir in tomatoes and green chilies. Place the meat mixture in a lightly greased medium casserole dish. Top with the cooked rice. Spread cheese mixture over all. Sprinkle crushed chips over casserole.
