MOM’S APPLE COBBLER
Ingredients
1/2 cup butter or margarine
2 cups sugar
2 cups water
1 1/2 cup sifted self-rising flour
1/2 cup solid vegetable shortening
1/3 cup milk
2 cups finely chopped apples
1 teaspoon cinnamon
Preparation
Heat oven to 350 degrees. Place butter in a 9- x 13-inch baking dish and put in oven to melt butter. Remove from oven. In a saucepan, heat sugar and water until sugar dissolves; set aside. In a mixing bowl, cut shortening into flour until mixture is texture of cornmeal. Add milk, stirring with a fork only until dough leaves the sides of the bowl. Turn dough out onto lightly floured surface and knead just until smooth. Roll dough out into a large rectangle, about 1/4-inch thick. Sprinkle apples over dough; sprinkle cinnamon over apples. Roll dough up in jellyroll fashion. Dampen the edges of the dough with water to seal. Slice dough into 1/2-inch-thick slices. Place slices in pan with melted butter. Pour sugar syrup carefully around rolls. Bake for 45 minutes. Makes 8 servings. (NOTE: Can be made with other fresh, frozen or canned fruits. If canned fruits are packed in liquid, drain and substitute liquid for part of the sugar syrup, always making sure to use 2 cups liquid.) —Janice Hudson, Crenshaw County
