Ingredients

2 cups sugar
1/4 cup water
Pinch of salt
3/4 cup white corn syrup
3 cups raw peanuts
1 tablespoon baking soda

Preparation

In a heavy 4-quart boiler, combine sugar, water, salt and corn syrup. Mix well. Cook over high heat, stirring constantly, until mixture begins to boil. Gradually add peanuts, and continue to boil, stirring, until peanuts begin to “pop” and turn dark brown. Continue cooking 1 minute more, stirring constantly. Remove from heat; stir in soda. Quickly pour onto a cookie sheet that has been coated with non-stick cooking spray. Spread quickly with a spatula. When hardened, break into pieces; store in an airtight container. —Alice Gregg, Marion County
