PEANUT BUTTER ICING
PEANUT BUTTER ICING
Ingredients
2 cups sugar
1 stick margarine
1 small can evaporated milk
1 teaspoon vanilla
3 heaping tablespoons creamy or crunchy peanut butter
Preparation
In a large saucepan, combine sugar, margarine and evaporated milk; stir to mix well. Bring mixture to a boil over high heat, stirring constantly; boil for 2 minutes, or to soft-ball stage. Remove from heat. Add vanilla and peanut butter; stir vigorously. Pour icing over a cooled yellow or butter-recipe sheet cake. Let sit to allow icing to harden. —Amy Self, Barbour County
