PECAN PIE MINI MUFFINS

Ingredients

1 cup packed brown sugar
1/2 cup plain flour
1 cup chopped pecans
2/3 cup butter, melted
2 eggs, beaten

Preparation

In a medium bowl, combine brown sugar, flour and pecans. In another bowl, combine butter and eggs; stir into flour mixture to blend. Fill greased and floured miniature muffin tins 2/3 full. Bake at 350 degrees for 20-25 minutes, until muffins spring back when pressed lightly on top. Remove from tins immediately, and cool on wire racks. Makes 2 1/2 dozen. —Pat Schrand, Coffee County
