Ingredients

25-30 pods fresh okra
Salt to taste
1/2 cup oil

Preparation

Wash okra; trim stems and slice. Salt. Pour oil into a black iron skillet; heat over high heat. Add okra; cover. Reduce heat and cook, stirring frequently, until okra is tender, about 30 minutes. Makes 4 servings. —Linnie Stacey, Monroe County
