APPLESAUCE MUFFINS
Ingredients
2 sticks margarine, softened
2 cups sugar
2 eggs
1 teaspoon vanilla
4 cups plain flour
2 teaspoons baking soda
2 teaspoons ground cloves
1 teaspoon allspice
1 teaspoon cinnamon
2 cups applesauce
1 cup chopped nuts
Preparation
In a large bowl, combine margarine, sugar, eggs and vanilla, blending well. In a separate bowl, sift together the flour, soda and spices. Add flour mixture, applesauce and nuts to first mixture and blend well. Spoon batter into greased muffin tins, filling two-thirds full. Bake at 350 degrees for 20-25 minutes, until tops spring back when lightly touched. Batter may be stored in refrigerator for two to three weeks and muffins baked as needed. Makes 3 dozen regular-size muffins. (Can be made in miniature muffin tins.)
