OATMEAL CHOCOLATE CHIP COOKIES

Ingredients

1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups self-rising flour
2 1/2 cups quick-cooking oats
1 (12-ounce) package semi-sweet chocolate chips
1 1/2 cups chopped pecans

Preparation

Cream together butter and sugars until light and fluffy. Add eggs and vanilla, mixing well. In a separate bowl, combine flour and oatmeal. Add to first mixture, blending well. Stir in chocolate chips and pecans. Drop batter by scant teaspoonfuls (Suzanne uses a baby spoon) onto greased cookie sheets. Bake at 375 degrees for 6 minutes, removing from oven before edges begin to brown. Do not overbake. Makes 7-8 dozen.
