HOT PEPPER JELLY
Ingredients
1 1/2 cups minced bell pepper
1/2 cup minced hot pepper*
7 1/2 cups sugar
1 1/2 cups white vinegar
2 (3-ounce) pouches liquid pectin
Red or green food coloring
Preparation
Combine peppers, sugar and vinegar in a saucepan. Bring to a boil and boil 6 minutes. Remove from heat; stir in pectin and coloring. Skim foam and quickly pour into hot, sterilized half-pint jars, leaving 1/2-inch head space. Seal jars. Makes 6 half-pints. (*Wear gloves while mincing hot peppers.)
