YELLOW SQUASH PIE
Ingredients
1 cup sugar
2 eggs
2 cups cooked, drained and mashed yellow squash
3 tablespoons self-rising flour
1 stick margarine, melted
1 teaspoon vanilla
1/4 teaspoon nutmeg
1/4 teaspoon lemon extract
1 (9-inch) pie shell, unbaked
Preparation
Combine sugar and eggs, blending well. Add squash, flour, margarine, vanilla, nutmeg and extract; mix well. Pour into pie shell. Bake at 350 degrees for 45-50 minutes, until lightly golden on top.
