APPLE-OATMEAL COOKIES

Ingredients

1 1/2 cups quick-cooking oats
3/4 cup all-purpose flour
3/4 cup whole-wheat flour
1/2 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup raisins (optional)
1 cup finely chopped peeled Granny Smith apples
1 egg, slightly beaten
1/2 cup honey
1/2 cup oil
1/3 cup milk

Preparation

In a medium bowl, combine oats, flours, brown sugar, baking powder, soda, salt and cinnamon. Mix well. Stir in raisins and apples. In a large bowl, combine egg, honey, oil and milk. Stir in dry ingredients, blending until batter is smooth. Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Dip fingers into water and press each cookie down to about 1 1/2 inches in diameter. Bake at 375 degrees for 10-12 minutes, or until lightly browned. Remove cookies to wire racks to cool. Makes 3 dozen.
