CAKE MIX OATMEAL COOKIES

Ingredients

1 stick margarine, softened
1/2 cup butter-flavored solid vegetable shortening
1/2 cup packed brown sugar
1 egg
1/4 cup water
1 box yellow cake mix, divided
1 teaspoon cinnamon
2 cups quick-cooking oats
1 cup chopped dates
1 cup raisins
1 cup chopped toasted pecans
1 cup chocolate chips
1 cup coconut

Preparation

In a large bowl, cream together the margarine, shortening and brown sugar. Add egg, water, and half of the cake mix. Beat until smooth. Stir in remaining cake mix along with the cinnamon, oats, dates, raisins, pecans, chocolate chips and coconut. Drop by teaspoonfuls about 2 inches apart on greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Makes 8-9 dozen cookies.
