SPANISH RICE
Ingredients
1/2 pound bacon
3 tablespoons bacon drippings
1 cup uncooked rice
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 cups canned, undrained tomatoes
1/4 cup ketchup
1 teaspoon salt
1/8 teaspoon pepper
2-3 cups hot water
Preparation
Fry bacon in a skillet until crisp; remove and reserve 3 tablespoons drippings in skillet. Crumble bacon and set aside. In reserved bacon drippings, saute rice, onions and bell peppers. Add bacon, tomatoes, ketchup, salt, black pepper and hot water. Cover and simmer 45 minutes or until rice is tender and has absorbed the liquid.-Makes 6-8 servings.
