Blackened Tilapia or Catfish Filets
2 tablespoons olive oil
4 fish filets
Cajun blackening seasoning
Lemon for garnish
Brush iron skillet lightly with olive oil and sprinkle with seasoning. Heat skillet until very hot. Sprinkle both sides of filets with seasoning and place in skillet. Cook on high heat in well ventilated area until fish blackens. Turn fish and reduce heat to medium-high. Continue to cook for 3-4 minutes. Garnish with lemon.
